Mini Cocktail Blini
Savor the season with a delicious blini that is easy and fun to make!
Ingredients

1 cup of your favorite pancake mix (try our Gluten Free Pancake Mix!)

½ teaspoon Seaonello Sea Salt (available at The Olive Scene)

½ cup microgreens of choice

2 tablespoons of red onion, chopped fine

¾ cup whole milk

1 egg
-
2 tablespoons The Olive Scene Extra Virgin Olive Oil, divided

tapenade, olive paste, sour cream or Greek yogurt, cream cheese or goat cheese, fresh sliced veggies, smoked salmon, etc for topping

thinly sliced red onion, scallions, fresh dill, capers, microgreens, chopped cornichons or olives, crumbled bacon, etc for garnish
Instructions

In a medium bowl mix together the pancake mix with the salt, microgreens, and red onion.

In a smaller bowl whisk together the egg, milk and 1 tablespoon olive oil

Pour the liquid mixture into the dry ingredients until combined, but do not beat. A few small lumps are ok.

Allow the batter to sit for 5 minutes to thicken (if the batter becomes too thick, add a bit more milk)

Heat a skillet and brush lightly with extra virgin olive oil

Drop batter in a scant tablespoon onto hot greased skillet. Cook 1 to 2 minutes until bubbles begin to form on surface. Flip, then cook about 1 minute more or until golden brown. Transfer to plate. Repeat with remaining batter.

Cool the mini blinis and serve on a board with your favorite toppings, and garnish.
