Mini Cocktail Blini

Savor the season with a delicious blini that is easy and fun to make!


  • 1 cup of your favorite pancake mix (try our Gluten Free Pancake Mix!)

  • ½ teaspoon Seaonello Sea Salt (available at The Olive Scene)

  • ½ cup microgreens of choice

  • 2 tablespoons of red onion, chopped fine

  • ¾ cup whole milk

  • 1 egg

  • 2 tablespoons The Olive Scene Extra Virgin Olive Oil, divided

  • tapenade, olive paste, sour cream or Greek yogurt, cream cheese or goat cheese, fresh sliced veggies, smoked salmon, etc for topping

  • thinly sliced red onion, scallions, fresh dill, capers, microgreens, chopped cornichons or olives, crumbled bacon, etc for garnish


  1. In a medium bowl mix together the pancake mix with the salt, microgreens, and red onion.

  2. In a smaller bowl whisk together the egg, milk and 1 tablespoon olive oil

  3. Pour the liquid mixture into the dry ingredients until combined, but do not beat. A few small lumps are ok.

  4. Allow the batter to sit for 5 minutes to thicken (if the batter becomes too thick, add a bit more milk)

  5. Heat a skillet and brush lightly with extra virgin olive oil

  6. Drop batter in a scant tablespoon onto hot greased skillet. Cook 1 to 2 minutes until bubbles begin to form on surface. Flip, then cook about 1 minute more or until golden brown. Transfer to plate. Repeat with remaining batter.

  7. Cool the mini blinis and serve on a board with your favorite toppings, and garnish.
