Zucchini Fritters

Delicious, with numerous ways to eat them, and so simple to prepare, you will never give away your garden zucchini again.



  1. Grate the zucchini and onions – or run them through the grater disk on a food processor, and add to a bowl.

  2. Add the egg, lightly beaten, salt and pepper, and enough flour to make a loose pancake batter-like mixture.

  3. Heat the olive oil in a nonstick sauté pan over medium heat.

  4. For each fritter, pour a generous spoonful of the zucchini batter into the pan, and spread it slightly.

  5. Turn them over after about 3-5 minutes, or when dark golden brown on the edges and underneath.

  6. Cook 3-5 minutes more on the other side.

  7. Drain on paper towels or a cooling rack, and serve with yogurt as an appetizer or side dish.
