Zucchini Fritters
Delicious, with numerous ways to eat them, and so simple to prepare, you will never give away your garden zucchini again.
Ingredients

2 -4 tablespoons The Olive Scene Medium Extra Virgin Olive Oil

Small or medium zucchini

Salt and pepper

1 small onion

¼- 1/3 cup flour

1 egg

Greek Yogurt (optional: add 1 clove crushed garlic)
Instructions

Grate the zucchini and onions – or run them through the grater disk on a food processor, and add to a bowl.

Add the egg, lightly beaten, salt and pepper, and enough flour to make a loose pancake batter-like mixture.

Heat the olive oil in a nonstick sauté pan over medium heat.

For each fritter, pour a generous spoonful of the zucchini batter into the pan, and spread it slightly.

Turn them over after about 3-5 minutes, or when dark golden brown on the edges and underneath.

Cook 3-5 minutes more on the other side.

Drain on paper towels or a cooling rack, and serve with yogurt as an appetizer or side dish.
