Spiced Cherry Tomatoes

The variations for this recipe are many. It depends on your personal taste and what you’re bringing to the table. Serve a spoonful on top of grilled meats, or as a side or appetizer with rustic, crusty bread to soak up that precious flavor. While cherry tomatoes fresh picked off the vine is our number one choice, this recipe greatly improved cherry tomatoes bought off season.

Makes 6 servings

Ingredients:

1 ½ pounds cherry tomatoes, halved, if large
1/3 cup Olive Scene Extra Virgin Olive Oil (see note for variations)
1 clove garlic, minced
½ teaspoon red pepper flakes (optional) 
Flaky sea salt, to taste
1 tablespoon fresh lemon juice

Directions:

  1. Arrange the cherry tomatoes in a shallow serving bowl or rimmed serving dish. 
  2. Heat the oil, garlic, red pepper flake, if using, in a large saucepan over low heat. 
  3. As oil begins to sizzle, remove from heat and spoon over tomatoes.
  4. Season with flaky sea salt and sprinkle with lemon juice. If you like, add a grating of parmesan cheese.
  5. Serve with warm crusty bread or as a relish on top of grilled steak or chicken. 

 

Note: Any single varietal would work well in this recipe, but to change up the flavor to compliment the type of food at the table, try The Olive Scene’s Fused/Infused Oils including Cilantro and Roasted Onion or Harissa Infused Olive Oil, and we like to scatter about ¼ cup crumbled feta on top.
