Quick and Easy Sweet Potatoes

A little microwave magic and you will have a speedy and delicious snack, side dish, salad or main dish topper. Great for the holidays.



  1. Whisk together the oil, vinegar, salt and pepper and set aside.

  2. Wash sweet potato thoroughly, pat dry, and pierce 3-4 times with a fork. Place potato on microwave-safe plate and microwave 5 minutes, turning halfway through. If your potato isn’t fork tender after 5 minutes, continue microwaving in 30 second increments.

  3. Split potato down the middle, drizzle each half with the oil and vinegar mixture, and enjoy.

Enjoy as a side dish, a snack, or chop up the cooked and cooled sweet potato and add to a salad or main dish. We love it topping spicy dishes!
