This Lemon Asparagus recipe is so easy and makes the perfect light and bright side.
Just 5 ingredients, 10 minutes to roast or grill, and easy clean-up!
2 bunches fresh asparagus
2 tablespoons The Olive Scene Eureka Lemon Olive Oil
1 teaspoon Oregano Balsamic Vinegar
1/2 teaspoon Sea salt
1/2 teaspoon ground pepper
1-2 tablespoons thinly shaved or grated Parmesan cheese
Mix 1 tablespoon Lemon Oil, the vinegar, salt and pepper and set aside.
Brush the asparagus all over using the remaining tablespoon of Lemon Olive Oil.
Grill over medium high heat for 5-8 minutes, or roast in a 425 degree oven for 10-12 minutes.
Remove from grill or oven and transfer to a serving dish.
Drizzle with lemon/oregano vinaigrette.
Sprinkle with cheese.
