2-3 medium sweet potatoes, scrubbed and cut
into 1/4” disks
2 tablespoons The Olive Scene Butter-All Natural Infused Olive Oil
¾ tablespoon kosher salt or sea salt
Heat oven to 400F.
Cut a piece of parchment paper to fit the bottom of a half sheet jelly-roll pan.
Arrange the potato disks on the parchment paper lined pan in a single layer, close together.
Thoroughly shake or whisk together the Cinnamon-Pear Balsamic and Butter Infused Olive Oil
Brush the oil and vinegar mixture on the tops of the sweet potato disks.
Sprinkle with sea salt and roast for 35-45 minutes until tender and the balsamic glaze has caramelized.
