Sweet potatoes are healthy AND delicious! Make your fries either sweet, herbed or full of heat depending on the oil and vinegar you choose.
dash of salt
pepper, optional, to taste
Preheat the oven to 450 degrees.
Cut the sweet potatoes into wedges, and place in a bowl for tossing.
Toss with the Olive Oil of choice, salt and pepper, to coat potatoes.
Spread sweet potatoes on a baking sheet lined with foil.
Bake at 450* for 40 minutes, turning halfway through cooking.
Remove potatoes to a serving dish and drizzle with balsamic vinegar
*Alternate method of roasting the sweet potatoes: Bake at 450* for 20-25 min, then without opening the oven, turn on the broiler and broil for 10-15 min, or until tops are golden. Proceed with recipe.
