Watermelon Salad
In the Mediterranean, they often serve cheese with fruit, so we combined them and made a delicious salad. On a hot summer day, it is so refreshing!
Ingredients

2 cups watermelon pieces cut in cubes (the key to a wonderful salad is picking a fabulous watermelon!)

2 ounces feta cubed

2 teaspoons The Olive Scene Traditional 18 Yr Balsamic Vinegar

1 teaspoon The Olive Scene Extra Virgin Olive Oil

½ teaspoon honey
-
¼ cup chopped, fresh mint leaves

pinch of sea salt

freshly ground pepper
-
1-2 teaspoons toasted sesame seeds (optional)
Directions

Place the watermelon, feta, mint in a bowl and toss gently.

In a small bowl mix the olive oil, vinegar, honey and a pinch of salt.

Drizzle on the salad and mix.

Sprinkle with freshly ground pepper and sesame seeds (if using).

Cover and let it sit in the refrigerator for an hour to chill before serving.
