Marinated Corn Salad

Cooking Time: 20-30    Servings: 4-6



  1. Mix all ingredients for vinaigrette and set aside.
  2. Cook corn till just tender.
  3. Cut the corn off the cob and mix with vinaigrette. 
  4. Refrigerate for a couple of hours before serving, or overnight. 
  5. A good use for leftover corn on the cob, if you ever have any.
