Grilled Romaine Salad
Salad on the grill? Why not! Everything that hits the flame benefits from a little char to bring out flavor and add new character. It’s simple, like summertime meal preps should be, and a real crowd pleaser. All this substantial salad needs is a grilled protein and to create a full meal.
Ingredients

2 tablespoons The Olive Scene Grapefruit White Balsamic Vinegar

3 cloves garlic, chopped

¼ teaspoon dried crushed red pepper

2 large heads radicchio, cored and quartered lengthwise

2 hearts romaine lettuce, sliced in half lengthwise

¼ cup shaved pecorino cheese

Sea salt and freshly ground black pepper, to taste
Directions

Preheat the grill to medium high.
- Whisk together the olive oil, vinegar, garlic, and crushed red pepper in a large bowl. Add radicchio and romaine, tossing to coat evenly. Let set for 20 minutes.
- Remove lettuce from bowl, reserving olive oil mixture. Sprinkle lettuces with salt and pepper.
- Place, cut side down on grill grate and grill until edges are crisped and slightly charred, about 6 minutes.
- Transfer to a serving platter, grilled side up, and drizzle with reserved marinade, sprinkle with cheese and serve immediately.
