Cucumber Dill Salad

This cool, refreshing dish that is great for those hot summer days when you just don’t want to turn the oven on. A great side to just about anything. 



  1. Sprinkle salt over cucumbers in a bowl.

  2. Let stand until cucumbers are soft, about 5 minutes.

  3. Squeeze liquid from cucumbers and discard.

  4. Mix the olive oil, balsamic vinegar, and sugar in a bowl; add onions and cucumbers and toss to coat.

  5. Add sour cream last, season with black pepper.

  6. Chill completely before serving, at least 30 minutes.
