Chilled Cucumber Dill Pasta Salad

A refreshing, herbaceous pasta dish perfect for picnics, lunches, and warm-weather dinners.

 

INGREDIENTS:

12 oz rotini or farfalle pasta
1 large cucumber, diced

½ small red onion, finely chopped

½ cup crumbled feta cheese

2 tbsp fresh dill, chopped (plus more for garnish)

¼ cup Wild Dill Olive Oil

2 tbsp Cucumber Balsamic Vinegar

Salt and pepper to taste

DIRECTIONS:

Cook the pasta according to package instructions. Drain, rinse with cold water, and let cool completely. In a large bowl, combine the cooked pasta, cucumber, red onion, and feta.

In a small bowl, whisk together the Wild Dill Olive Oil and Cucumber Balsamic Vinegar. Season with salt and pepper. Pour the dressing over the pasta mixture. Add fresh dill and toss to coat evenly.

Chill for at least 30 minutes before serving. Garnish with extra dill and feta if desired.

Pro Tip: Add grilled shrimp or shredded chicken to turn this into a light main dish.
