Slice open an avocado and you have a perfect cup to fill with any number of ingredients and fillings. Madeline’s Avocados on the Half-Shell can be served as appetizer, snack or side.
- 2 avocados cut in half with pit removed, skin on
- 1 tablespoon The Olive Scene Organic Red Wine Vinegar
- 1 tablespoon of Dijon mustard
- 3 tablespoon of The Olive Scene medium Extra Virgin Olive Oil
- 1 teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- Thoroughly whisk all together, and make sure to taste and adjusting the seasoning to your liking.
- Scoop the Avocado out of the skin and enjoy.
