Grilled Zucchini Planks
Can we agree that zucchini is the summer’s most prolific vegetable and a reliable side dish? Grilling it is a good way to take advantage of this bounty, especially while the grill is still hot from the main course.
Serves 4-6
Ingredients:6 medium zucchini, about 2 pounds
1 teaspoon dried oregano
1 teaspoon dried mint
1/2 teaspoon red pepper flakes
Coarse salt and black pepper
4 tablespoons Olive Scene Single Varietal Extra Virgin Olive Oil
Lemon wedges, for serving
- Slice the zucchini into ¼-inch planks, stem end to blossom end.
- Arrange on a baking tray and sprinkle with the garlic, herbs, red pepper flakes and yellow squash lengthwise into 1/4 inch slices. Arrange on a platter or in a baking dish and sprinkle both sides with the garlic, oregano, mint, hot pepper flakes and season with salt and pepper.
- Drizzle with 3 tablespoons of the oil and turn the slices several time to coat both sides. Let marinate for 15 minutes.
- Preheat the grill to high. When ready, arrange the slices on the hot grate and grill until nicely browned on both sides, about 4 to 6 minutes per side.
- Transfer the zucchini to a platter and drizzle with the remaining tablespoon of oil. Garnish with lemon wedges and serve immediately.
