Grilled Zucchini Planks


Can we agree that zucchini is the summer’s most prolific vegetable and a reliable side dish? Grilling it is a good way to take advantage of this bounty, especially while the grill is still hot from the main course.

Serves 4-6

Ingredients:

6 medium zucchini, about 2 pounds  
1 teaspoon dried oregano
1 teaspoon dried mint
1/2 teaspoon red pepper flakes
Coarse salt and black pepper
4 tablespoons Olive Scene Single Varietal Extra Virgin Olive Oil
Lemon wedges, for serving

Directions:
  1. Slice the zucchini into ¼-inch planks, stem end to blossom end. 
  2. Arrange on a baking tray and sprinkle with the garlic, herbs, red pepper flakes and yellow squash lengthwise into 1/4 inch slices. Arrange on a platter or in a baking dish and sprinkle both sides with the garlic, oregano, mint, hot pepper flakes and season with salt and pepper. 
  3. Drizzle with 3 tablespoons of the oil and turn the slices several time to coat both sides. Let marinate for 15 minutes. 
  4. Preheat the grill to high. When ready, arrange the slices on the hot grate and grill until nicely browned on both sides, about 4 to 6 minutes per side. 
  5. Transfer the zucchini to a platter and drizzle with the remaining tablespoon of oil. Garnish with lemon wedges and serve immediately.
