Wheat Berry Bowl

Wheat berries are the edible part of the wheat kernel, high in fiber and protein, chewy with a nutty flavor. This healthy and satisfying combination of flavors pairs oh, so well with a vinaigrette made from our roasted walnut oil and apple balsamic and is something we could eat all year round. 

Makes 4 servings

Ingredients:

1 cup dried wheat berries, rinsed
½  cup dried cranberries
1/3  cup Olive Scene Roasted Walnut Oil
3 tablespoons Olive Scene Gravenstein Apple White Balsamic Vinegar
½  teaspoon salt
Freshly ground black pepper
5 cups chopped kale
½  cup diced red onion
1 yellow bell pepper, diced

Directions:
  1. In a large pot, Bring 8 cups of water to a boil over high heat. Reduce heat to medium-high and cook, covered, until tender, 30 to 35 minutes. Stir in the cranberries for last 2 minutes of cooking. 
  2. Drain and rinse with cool water.
  3. In a large bowl, whisk together the oil, vinegar and salt. Season with pepper.  
  4. Stir in the wheat berry mixture along with the kale, red onion and Whisk oil with vinegar and salt in a large bowl. Season with pepper. 
  5. Stir in wheat berry mixture, kale, onion and bell pepper. Toss until evenly coated. Serve at room temperature.
