Spicy Apricot Marinated Shrimp Skewers

1 lb. uncooked shrimp shelled and deveined

Marinade:
1/4 C. Blenheim Apricot Balsamic Vinegar
1/4 C. Baklouti Fused Olive Oil
1 tsp. Dijon Mustard
1/2 onion, diced small
Salt and Pepper

Place all the marinade ingredients in a jar and shake well, or combine in a blender.

Pour over skewered shrimp and marinate in the refrigerator for 30 minutes to 4 hours. Grill on medium heat 3 minutes each side or until cooked. Marinade is also great with chicken! Enjoy!
