Brussels Sprouts with Bacon and Balsamic
Cooking Time: 1 hr Servings: 2-4
One of our most requested recipes: easy and a great way to transform basic brussels sprouts into a gourmet side dish.
Products needed:
The Olive Scene bold Extra Virgin Olive Oil
The Olive Scene Traditional 18 Year or The Olive Scene Fig Balsamic Vinegar
Ingredients:
4 cup brussels sprouts
½ cup walnut or pecan pieces
2 slices of bacon, diced
2 tablespoons Olive Scene bold Extra Virgin Olive Oil
1-2 tablespoons Olive Scene Traditional Balsamic Vinegar or Fig Balsamic Vinegar
-
Salt and pepper, or seasoning blend
(we like our Dean & Jacobs Parmesan Seasoning)
Directions:
Trim the Brussels sprout ends and cut any large ones in half. Set aside.
Heat a large frying pan over medium-high heat. Add nuts in a single layer and roast them, stirring frequently, until they are golden brown and aromatic.Remove the nuts from the pan so they do not continue cooking, and set aside.
Heat the skillet again, to medium. Add the bacon and sauté until crispy, and remove to a paper towel lined dish.
Pour off the bacon grease from the pan, leaving the bits. Add olive oil to pan and heat over medium heat.
Add sprouts to pan, with a few grinds of salt and pepper. Sauté sprouts until tender and browned, but not mushy. Do not stir too often.
Drizzle with balsamic vinegar and allow to reduce as you gently toss the sprouts, being careful not to overcook them.
Toss with bacon and 1/3 cup of the nuts and remove to serving dish. Top with remaining nuts and serve
