Lemongrass Mint Balsamic Mojito

Mojitos should be served in tall Collins glasses but who’s going to complain if it’s served in a wine tumbler or rocks glass? No one. It’s delicious. Fresh mint from the garden makes a particularly spectacular drink.

Ingredients:

6 fresh mint leaves, plus a sprig for garnish
1 ½ tablespoons simple syrup
1 tablespoon freshly squeezed lime juice
1 tablespoon Olive Scene Lemongrass Mint White Balsamic Vinegar
2 ounces light Rum
Club soda
Lime slice

Directions:
  1. Place the mint leaves, simple syrup, lime juice and vinegar in a glass. Using a wood spoon to muddle (crushing to release oils and flavors) together to form a syrup. 
  2. Add ice cubes, then rum and top with club soda. 
  3. Garnish with mint and a slice of lime. 

 If you’ve never made a simple syrup, it’s really simple! Add 1 cup sugar and 1 cup (8ounces) water to a saucepan. Set over medium high heat and stir until dissolved. Remove from heat and let cool to room temperature. Store in a clean pint bottle with a tight fitting lid for up to 2 months. Makes 1 ½ cups.
