Irish Whiskey Cake


Unadorned and delicious, this is the perfect snack cake, picnic cake, coffee cake, or dessert cake.

Products Needed:

Ingredients:

  • ¾ c The Olive Scene Mild Flavor or Medium Flavor Extra Virgin Olive Oil

  • 1 (8 ounce) package cream cheese, softened

  • 1 1/4 cups white sugar

  • 6 large eggs, at room temperature

  • 2 teaspoon The Olive Scene Vanilla Balsamic Vinegar

  • 3 tablespoons Irish whiskey

  • 2 1/2 cup cake flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/8 teaspoon ground nutmeg

     

Directions:

  1. Preheat an oven to 350 degrees.

  2. Grease and flour a tube pan or 2 loaf pans.

  3. Mix flour, baking powder, salt and nutmeg, and set aside

  4. Beat the oil and cream cheese with an electric mixer in a large bowl until light and fluffy.

  5. Beat in the sugar until well blended.

  6. The mixture should be noticeably lighter in color.

  7. Add the room-temperature eggs one at a time, allowing each egg to blend into the cream cheese mixture before adding the next.

  8. Mix in the vinegar and whiskey.

  9. Fold in the flour mixture until just combined

  10. Pour into the prepared tube pan.

  11. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

  12. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

    Any of the deep, dark, fruity balsamic vinegars are wonderful substitutions for the Vanilla Balsamic Vinegar. Black Cherry, Blackberry Ginger are two favorites.
