Oatmeal Pancakes
Easy and delicious, these oatmeal pancakes are a great way to get a healthy start to your day.
They are especially tasty when served with our Maple, or Cinnamon Pear Balsamic Vinegar.
Ingredients
½ cup flour
1 ½ cup quick oats (not instant)
1 tablespoon baking powder
1 ½ cup milk
1 tablespoon The Olive Scene All Natural Butter Infused Olive Oil*
1 egg
1 tablespoon honey
optional: add 1 small apple, peeled and diced, or 1 cup blueberries
Instructions
Mix dry ingredients.
Mix milk, egg, oil and honey.
Mix wet ingredients into dry, if you choose, and mixing well.
Allow to sit for 5-10 minutes to thicken.
Add the apples or berries if using.
Spread 1/4 cup of batter on a hot, greased griddle, and cook until golden brown on both sides.
For a healthy syrup: Mix: 1/4 cup The Olive Scene All Natural Butter Infused Olive Oil with ½ cup The Olive Scene Vermont Maple Balsamic Vinegar and whisk well. Use instead of traditional maple syrup.
*A fresh pressed mild Extra Virgin Olive Oil, or Blood Orange Olive Oil, Eureka Lemon Olive Oil, or Pecan Oil can be substituted for the Butter Oil.
