Peach Salsa with Tuscan Herb

Ingredients:
1 teaspoon Tuscan Herb Olive Oil
1 Tablespoon Peach Balsamic Vinegar
4 fresh peaches, sliced and diced
2 cups mixed cherry and grape tomatoes, quartered or diced
1-2 ears of corn, cooked and removed from cob (or 2 cups frozen corn kernels)
1 medium red onion, diced
1 jalapeno, seeded and minced
1/2 bunch fresh parsley, minced
1 teaspoon chili powder
Juice from 1 lime
Salt and Pepper
Instructions:
Mix peaches with vegetables, parsley and chili powder. Add olive oil, balsamic vinegar and lime juice. Mix all together and chill in refrigerator at least one hour before serving.
Delicious with tortilla chips, on grilled bread or as a side with grilled salmon.
