Baked Feta With Onions and Olives
Serves 6
This appetizer feels so Mediterranean! When you bake feta, the flavor intensifies and becomes more spreadable. Dip in a piece of bread to scoop out the cheese…and be sure to have a spoon handy so you can drizzle the warm vinaigrette from the baking dish.
Ingredients:
1/3 cup Olive Scene Traditional 18-Year Balsamic Vinegar (see note)
2 tablespoons Olive Scene Single Varietal Extra Virgin Olive Oil
1 teaspoon caraway seeds, toasted
Freshly ground black pepper, to taste
Vegetable spray
2 8-ounce packages feta cheese, cut horizontally into 1/2-inch thickness
1/3 cup thinly sliced red onions
1/3 cup pitted Kalamata olives, quartered lengthwise
Crusty French baguette slices
Torn parsley, dill sprigs or rosemary, for garnish
Directions:
- Preheat the oven broiler. Whisk together the vinegar, oil and toasted caraway seeds. Season with black pepper. Set aside.
- Coat a baking sheet with vegetable spray. Place cheese on prepared baking sheet and broil for 5 to 7 minutes or until cheese is crusty and golden brown.
- Spoon the vinaigrette onto a platter. Transfer the cheese to top. Sprinkle with onions and olives, surround with bread slices and herb garnish and serve.
