Balsamic Strawberry Shortcake with Basil Olive Oil Biscuits

Roasting strawberries in balsamic vinegar brings out their natural juices and intensifies their flavor. An olive oil biscuit soaks up the sweet/tart syrup while keeping a crispy exterior. Rich, sweet whipped cream or ice cream balances out the tartness of the berries. 5. Drizzle with Strawberry Balsamic Vinegar.

  6. Put Brie wheel back together by placing other half on open round (create a sandwich with the brie rounds acting as bread).

  7. Wrap in foil and bake 10-12 minutes in 350 oven.

  8. Garnish by spooning a dollop of strawberry balsamic jam on top of brie round and adding walnut halves.

  9. Wrap in plastic wrap and refrigerate until an hour or so before serving.

To serve:

  1. Slice torte to display filling.

  2. Allow torte to come to room temperature and serve with crackers, French bread, or crostini.

*For an elegant look, place on a bed of mesclun greens and arrange fresh strawberries around the cheese.

**For a rustic look, place torte directly on a bread board
