Bean Salad w/Currants and Pine Nuts

  1. In a small deep bowl whisk first three ingredients together, then drizzle in the olive oil whisking constantly.
  2. Add salt and pepper to taste.
  3. Pour over green beans and toss well.
  4. Set aside a small amount of the currants and pine nuts for a garnish, then add the pine nuts and black currants to the beans and toss again.
  5. Refrigerate until ready to serve.

May make up to 4 hours ahead. Garnish just before serving. Enjoy!
