Balsamic Pork Bites

Cooking Time: 20-25 min    Servings: 4-6

Products needed:

Fig Balsamic Vinegar


  • 2 tablespoons olive oil
  • 1 large red onion, sliced thin
  • 2 pounds pork tenderloin or round steak


  • 1 cup balsamic vinegar, try Red Apple, Vermont Maple, Fig, Black Currant
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 tablespoon coconut aminos or tamari sauce
  • 1/2 teaspoon oregano
  • salt and pepper to taste


  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the onion and cook for about 3 minutes, until softened and starts to brown.
  3. Remove onion and set aside.
  4. Add pork to the skillet.
  5. Season with salt and pepper.
  6. Brown on all sides.
  7. Add onion back to skillet.
  8. Add all of the sauce ingredients to the skillet, stirring up any delicious bits of goodness that have stuck to the bottom of the pan.
  9. Bring the liquid to a slight boil, reduce heat and simmer uncovered, until the pork is done and balsamic sauce has reduced and thickened slightly, about 5 minutes.
  10. Add more salt and pepper to taste and serve.
  11. Serve over pureed cauliflower, polenta, and mashed potatoes.
